The technical manuals of the Institute are the most complete and comprehensive published in Spanish since 1937. They are also the first published in Portuguese and adopted in the whole Brazil by SENAC the national training services agency. The manuals presented here are only a partial listing of a long tradition of leadership in culinary studies.
